Tonight’s dinner menu: Lemon and thyme marinaded chicken thighs, grilled mushrooms and peppers, roasted beet and gorgonzola salad, and lacinato kale salad. For dessert, apple crisp. Sorry guys, no recipe here. My only advice…use your favorite marinade for the chicken and vegetables. Apply your favorite vinaigrette to roasted beets and just add gorgonzola, julienne sweet onions, and italian parsley. For the kale salad, just wash kale, tear into pieces, julienne carrots and dress with your favorite dressing! Let sit for a few hours! Lovely meal!
